GARDEN PASTA SALAD
Ingredients
1 C. uncooked shell macaroni
1 C. green beans, cut into pieces
1/4 C. julienne cucumber
1/4 C. sliced radishes
1/4 t. salt
1 C. grape tomatoes, sliced
1/4 C. lte. italian dressing
Cook macaroni with salt according to package. Meanwhile steam beans. When done let both drain and let cool. Combine pasta, beans, veggies and dressing. Chill.
DUMPLINGS RECIPE
Ingredients
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
Mix flour, baking powder and salt. Add milk to make a soft dough. Drop by spoonful into hot stew; steam, covered for 10 minutes.
Note: Plenty of stew or fruit juice (your preference) is necessary for successful dumplings. Makes delicious chicken noodle dumplings!
FRYING PAN SUPPER
Ingredients
1 lb. hamburger
1 small onion
2 c. potato, cut small
2 c. celery, cut fine
1/2 c. water
2 c. shredded cabbage
salt
Fry until meat changes color. Then add potato, celery, water and shredded cabbage. Sprinkle with salt.
Cover and simmer for 20 minutes or until vegetables are done. Canned hamburger or chuck meat can also be used.
RED BEETS TO CAN
Ingredients
Red beets, cooked, peeled and quartered
5 c. white sugar
4 c. water
4 c. vinegar
Cook for 10 minutes. Fill jars with cooked, peeled and quartered red beets. Fill to mouth of jar with cooked liquid. Process in hot water bath for 5 to 10 minutes.
Yield: 10 quarts
CUSTARD FRUIT PIE
Ingredients
1 lg. c. fruit
1/2 c. sugar (more for rhubarb)
1 c. milk
2 eggs, beaten
1/2 T. flour
1 tsp. butter
Heat milk to scald. Beat eggs; add sugar, flour, warm milk and butter. Pour into unbaked pie shell and add fruit. Bake at 375 degrees until set.
BERRY PATCH
COFFEE CAKE
Ingredients
1/2 cup (1 stick) butter, softened
1 pkg. (8 oz.) Cream Cheese, softened
1 cup sugar
2 eggs
1/2 tsp. vanilla
2 cups cake flour
1 tsp. Baking Powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 cup milk
1/2 cup red raspberry preserves
Powdered sugar
Preheat oven to 350 degrees F. Beat butter and cream cheese in large bowl with electric mixer on medium speed until well blended. Add sugar; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla. Combine flour, baking powder, baking soda and salt. Add to cream cheese mixture alternately with the milk, mixing well after each addition.
Pour into greased and floured 13x9-inch baking pan; dot with preserves. Cut through batter with knife several times for marble effect. Bake 35 min. or until top is golden brown and toothpick inserted in center comes out clean. Cool completely.
Sprinkle cooled cake lightly with powdered sugar just before serving.
APPLE PIE FILLING
Ingredients
1 gallon sliced apples
3 C. white sugar
6 C. water
1 1/2 sticks butter
1 C. Perma Flo
1 t. vanilla
1 t. cinnamon
3 t. lemon juice
Cook all together except apples. Add apples and put in jars to seal.
