*1 c. flour

*1 1/2 tsp. salt

*1/2 tsp. pepper

*1 tsp. thyme

*3 lb. stew beef, cubed

*3 tblsp. oil

*5 c. beef broth or stock

*1 c. strong brewed coffee

*1 tblsp. Worcestershire sauce

*1 tsp. paprika

*1 tsp. sugar

*3 tblsp. catsup

*6 potatoes, peeled and quartered

*2 onions (or one large), quartered

*6 carrots, peeled and quartered

*1/2 c. peas, fresh or frozen

1.Place the flour, salt, pepper and thyme in a bag and shake to blend. Add the beef cubes, a few at a time, and shake to coat.

2.In a large stockpot, heat the oil until hot and add the beef cubes; brown on all sides. Next, add the rest of the ingredients except for the peas. Reduce heat to low, cover and simmer for two hours. Add the peas and continue cooking for another 15-30 minutes.
