Carmel Pudding


*2 tblsp. butter

*3/4 cup brown sugar

*1 quart milk

*2 eggs

*2 tblsp. cornstarch

*2 tblsp. flour

*Pinch of salt

*1/4 cup milk


1. Melt butter in a heavy saucepan. Add brown sugar and stir until bubbly and brown, being careful not to burn. Stir in the milk, heat thoroughly, and then set aside.

2. Beat together the eggs, cornstarch, flour, salt, and 1/4 cup milk. Add to the warm milk and brown sugar mixture and stir just until it reaches the boiling point. Remove from heat and beat with a rotary beater. Let the pudding cool a bit before eating.
