Pumpkin Coconut Pudding Dessert

Crust

Ingredients:

*1 cup flour

*1 cup shredded coconut

*1/2 cup shortening

Directions:

Mix the first three ingredients together thoroughly and press into the bottom of a 9 x 13-inch baking pan. Bake at 350° for 10 minutes.

Pudding

Ingredients:

*1 qt canned pumpkin

*1 1/2 cups sugar

*4 eggs

*1/2 cup milk

*1 tsp. vanilla

*2 tsp. cinnamon

Directions:

While the crust is baking, mix together the canned pumpkin, sugar, eggs, milk, vanilla, and cinnamon for the pudding, in the order given. Pour over the crust and continue baking at 350° for another 40-50 minutes.
