Broccoli Basil Pasta Salad

Salad

Ingredients:

*8 oz. rotini or penne pasta

*2 1/2 cup fresh broccoli florets

*2/3 cup diagonally sliced carrots

*1/2 cup thin strips of red bell pepper

Directions:

Cook pasta in boiling water until al dente. Then add broccoli and carrots to the pasta and boil 1 minute. Drain pasta and vegetables and rinse with cool water.

Dressing

Ingredients:

*1/2 cup non-fat mayonnaise

*1/3 cup non-fat sour cream

*1/4 cup orange juice

*1 tbsp. prepared mustard

*1 tbsp. fresh basil, or 1 1/2 tsp. dried

*1/4 tsp. pepper

Directions:

Combine the dressing ingredients well and toss with pasta, cooked vegetables and bell pepper; chill two hours. This makes a good summer meal if thin strips of grilled chicken are added.
